Design Hotels – Introducing Taste and Place: The Book of Design Hotels

A year ago, our team began the journey that would become Taste and Place: The Design Hotels Book. In a first for us, we’ve used our annual anthology to undertake a broad and inclusive exploration of a single topic: food, an integral part of purposeful travel. While the heartbreaking war of Ukraine continues, we would like to note that our latest post includes a great story about how cooking creates camaraderie at Hotel Bursa, Kyiv, which has been forced to close for the time being. the Sotck exchange The team is safe and has given us their approval to proceed with the release of the book. In our most ambitious book to date, we’ve tapped into leading writers, photographers, creative chefs and culinary innovators to explore forward-looking ideas and inspiring practices around food in our properties, our destinations and the wider community. With stories of Rock House Hotel in JamaicaRastrello in ItalySatoyama Jujo in Japanand much more Design hotels places, these stories go beyond the dish, the kitchen and the dining room to reveal the holistic connectivity of food. Writers and collaborators such as Nicholas GillLin Yee Yuan and Gisele Williams, explore food and locality, provenance, production, people, landscape and architecture. Still the visual compendium, we commissioned photographs from Robbie Lawrence, Marina DenisovaVivek Vadoliya and others as they take us on a global journey.

From the regional terroir through the kitchen to the community that connects us, the inspirations gathered in this edition tell stories of methods and self-production, social commitment, collaborative work practices, respect for cultures and ingredients, rethinking food waste and visionary, big picture hospitality. We believe that a hotel’s ecosystem seen through the lens of food provides the perfect microcosm to better understand larger systemic changes.
